CANESTRELLI DELLA PROVINCIA DI TORINO

Typical sweetmeats of the Canavese and Valle di Susa, Canestrelli are prepared using recipes which have remained secret since the Middle Ages, when, arranged in woven cane baskets, they brightened important occasions.

These wafers, variously flavoured with lemon, vanilla or cocoa still retain their ancient traditional shape: Canestrelli di Vaie are thick with a grid pattern in relief; whereas those of Montanaro are thinner with only a light grid pattern; those of Tonengo di Mazzè are like medieval coins and those of Borgofranco d'Ivrea are crunchy, very thin and impressed with the family coat-of-arms.
