In Montalto Dora the loose, cool earth is particularly suited to growing a variety of cabbage known as "Savoy" famous for its excellent quality and flavour: an essential ingredient for "soupa 'd pan e còj" (cabbage and bread soup), excellent for mopping up "bagna càuda" straight from the earthenware bowls it's served in, and perfect for preparing Canavese "caponèt" (stuffed cabbage leaves with filling made from roast or boiled meats, chopped cooked salami, eggs, parmesan, garlic and parsley).
